Alcohol has a lower boiling temperature than water so the alcohol content of any soup where the alcohol isn’t added immediately before serving is going to be negligible. Basically, once the waters boiling the alcohol is gone.
Edit: spitballing here but you might be able to use a pressure cooker to make a soup with an ABV.
